We visited some investigators on Saturday last. They have a piece of land that has been in their family for generations. This present generation love to grow their own food. These olive trees are 25 to 30 years old.
This Olive tree is 15 years old.
The trees are cut and trimmed to keep the fruit within reach,

Artichoke plants, he had orange , apple , lemon, -- we did not know all the trees, but they have what the call a Dolce Lemone Tree, Sweet lemon. We have heard of them but never figured out what they look like and where to find them, Antonio has a sweet lemon tree! We finally get to try them.
You cannot see well but these are 3 year old olive trees he is training to spread out the main branches to open up the tree. He said the best olive trees have wild roots , they are stronger, at some point the tame olive branches are grafted in.
He raises chickens and sells eggs.
He also raises rabbits. We are going to pranza tomorrow ( lunch) and having one of those rabbits. His big rabbits are 30 + pounds.
The white veggie is a main food they eat here. It has the slight taste of licorice and very much like celery. They are large. This one is a small one, they eat them rare and cooked. The hills are covered with this food. The large bumpy lemon is the sweet lemon and other one is just a regular lemon.
Simple recipe for the veggie. Cut and slice like you would for celery then peel and cut up oranges or tangerines. Pour a little olive oil, some red wine vinegar, & salt. It is very good!
We were told to peel off the outer rind and the eat the white portion.
The inside has 4 parts unlike a regular lemons. The white part is sweet and really good. Kind of cross between a Asian Pear texture and a skin in a citrus fruit and the favor is perfect mild lemon. The inside lemon is not as sour either-- it is good to eat.
